Handpicked, maceration during 18 hours and controlled-temperature fermentation. Resting in stainless steel tank with their own fine lees with the batonnage technique.
On the nose
Aromas of white fruits, citrus, tropical fruits and hints of fennel.

Nice and persistent, balanced acidity and long aftertaste.

Fresh salads, foie, seafood, rice, oily fishes and white meat.
