The Carignan from this plot is harvested twice. The first pass is for greater freshness and acidity. It is fermented in stainless steel tanks and then transferred to barrels for a few months. After these months, the wine is bottled and spends some more time in the bottle before being released to the market in order to achieve a more rounded mouthfeel. The duration of these stages may vary according to the tasting of the product, always aiming for a total of 16 months before release.
